8 apples, peeled & sliced (½ Granny Smith, ½ Honeycrisp)
2 sticks cold unsalted butter, cubed
2 tbsp cold unsalted butter, sliced
1¼ cups + 1 tsp sugar
1 tbsp ground cinnamon
1 tsp ground nutmeg
2½ cups + 3 tbsp all-purpose flour
1 tsp salt
¼ to ½ cup ice water
1 egg, lightly beaten (for egg wash)
cinnamon/sugar for dusting
Step-by-Step Instructions for the Perfect Apple Pie
Instructions:
- Preheat oven to 400°F
- Make the dough:
• In a food processor, pulse 2½ cups flour, 1 tsp salt, and 1 tsp sugar
• Add cubed butter and pulse
• Slowly add ice water until dough just comes together
• Divide dough in half, shape into discs, wrap in plastic, and chill for 1 hour - Prepare the filling: In a small bowl, mix:
• 1¼ cups sugar
• 1 tbsp cinnamon
• 1 tsp nutmeg
• 2 tbsp flour - Toss with sliced apples in a large bowl
- Assemble the pie:
• Roll out one dough disc on a floured surface and fit into pie pan. Trim edges.
• Pour in apple mixture. Top with 2 tbsp sliced butter.
• Roll out second dough disc and place over filling. Crimp edges to seal.
• Cut 4 slits into top crust. Brush with egg wash. Sprinkle with cinnamon sugar.
